I really don't understand the Ethiopian food appeal. I've tried it, but it just was lacking in appeal to me. I hate to say it, but all the non-native food I've confused has been more appealing to me once it has been westernized. (I know, I'm horrible) A classic example of this is the famous Indian dish, Chicken Tiki Marsala which originated in... Scotland.
I completely understand that. I dislike most authentic Thai food, but I regularly enjoy some of the Westernised variants. Ethiopian food is easy to do badly, and even when it's good it's not to everyone's taste. I happen to like it, but only as an occasional thing. Mozambiquan cuisine, on the other hand, is Portuguese with a few minor variations -- the most reliable way to tell the difference between the two is to see what's on the imported beers list in the menu (or to actually be in one of those two countries).
Now, Indian food. Or, as about 17% of the world's population calls it, food. There's as much variety in Indian cuisine as there is in European cuisine. If you like chicken tikka masala, you'll probably like a bunch of "real" Indian dishes, such as the fairly similar murgh makhani (butter chicken, but the Hindi is more fun to say) and various other Delhi specialties. For a completely different experience, try a masala dosa from South India. I could eat those all day.
