Wow, that's cool -- I've never heard of that before!

But as long as we're talking about what comes from a pig that is better than bacon, I have two for you:

1. My huge favorite is country ham -- to be clear, the southern breakfast variety:


2. Eastern NC Barbecue!  Nowhere else in the country, not even western-central NC, uses the vinegar-based way of cooking it.  It's awesome:

Looks tasty although I dunno about the strawberries, although when you say NC all I can think of is the New Conglomerate from Planetside. They do look FREEDOM AND 'MERICA though.

Hahaha. They're traditional food from a hog-producing state, so I think it's more historical necessity than cultural statement. But yeah, very southern in particular. NC = North Carolina.

For the record, there is a place in my neck of the woods (north-east MS) that does the vinegar based, NC-style barbecue.  It is definitely the best barbecue I've ever had.  As one of my favorite foods, I must admit I've eaten a lot.

I love me some country ham, but thankfully I've never had to choose between it or bacon.  After all, why choose when you can have both?

Oh cool on NE MS! Nobody I know has ever encounter the vinegar-based outside of NC. Western NC does it more like TX, for instance. So many ways to make that one food!

Yeah, the barbecue here (I'm also in NC, not far from Chris) might be one of the best foods ever. There is a place right down the road from me (that was featured on Man vs. Food once) that does barbecue really well, and sometimes I wish it wasn't so close. I might eat better.

As for vinegar based bbq sauce well.... I'll just say at least it isn't the mustard based kind

But on the topic of delicious food: I'll throw biscuits n' gravy to the mix. Delicious. Nobody has good biscuits n' gravy around here that I've seen though

You talking about the Q Shack, Josh?  I was actually a little disappointed with them, though they're ok.  I like Barbeque Lodge and Smithfields the best, personally.

No, I'm not a big fan of them either. I'm talking about Backyard on NC 55. If you haven't been there you should plan a trip to Durham for it some time. It's worth it.

We have vinegar-based BBQ here near Athens, GA, but I believe it's due to some NC'ers living in exile

I love that BBQ.  I really like the sugar-based stuff too, but the vinegar-based stuff takes it from "great" to "all time top ten foods".
