The game is of course playable in a window, but out of curiosity is there a reason for the artificial limit on max resolution in the game?

What resolution were you looking for that it doesn't support?  Certainly we can increase things to support higher; I don't recall what AI War supports, but it does work on EyeFinity.  This game should be capable of the same, providing you have the GPU for it.

Max width as reported by the game seems to be 6000 pixels, however 3x 2560x1600 displays in landscape eyefinity/surround is 7680x1600. I don't recall ever trying AI War on this setup, though I might reinstall it again and try it.

* The maximum resolution of the game has been increased to support the 7680x1600 EyeFinity resolution.

Mother of god! That has to take some serious graphic hardware to run any decent game in that resolution. O_o
