What do you use for recording and editing software? I've wanted to make a lets play for some time but I don't have anything to record and edit with.

I use Fraps and Windows Live Movie Maker. Which I find work very well. I would like to achieve higher quality vids but the upload time is just too long.

I would suggest you record the game at 1280x720 for the standard 16:9 ratio, it best to set the game itself at the same resolution to get the best quility.

Try to giving DXtory a try not only is it less resource intensive, but it has a lot more control in terms of recording options. Here is a Video that does a great job of explaining why it superior to fraps Fraps vs DXtory

I just found Taski. It's nice because it is free. I'll have to look into DXtory in a bit.
