As a follow-up question: can a beginner handle the base game with Zenith Remnant and Children of Neinzul enabled from the start?

Well, my first game was difficulty 7, vs two random moderate/easier AIs, and I almost had the second AI homeworld (that and the 'border aggression' thing turned that game into tedium pretty quickly though). The expansions don't really increase the difficulty, just add more options for you and the AI. I would stay away from "Hard Golems" and "Rocketry Corps" though.

Minor Factions and AI Plots can change the difficulty of the game (generally towards "harder") but if you don't enable the ones added by an expansion it shouldn't impact things.

Some of the LotS units aren't properly balanced yet and can mess with overall balance, and some of them (like the gravity guardians) may just generally be a tough thing, we'll see on all that.

I agree that the expansions themselves- that is, the additions of lots of new ship types for both you and the AI- dont necesarilly increase difficulty at all (just variety and the exponential quantity of 'awesomeness'), but the expansions each include the addition of various minor factions and AI plots that if enabled most certainly do ramp up the difficulty (esp. hybrid hives) so activate these with caution until you know how they affect the game.

And do all the tutorials first! They will help. A lot.

And like it's been said. Some options (hybrid hives, avenger, human colonies, marauders, preservation wardens etc. etc.) will increase the difficulty a fair amount.
