Just to raise awareness (read, make Keith aware of), here is a list of issues that has been bugging me but seems like they should be no more than moderatley difficult to deal with, and some VERY simple to deal with.
Also, I am not including unit balance suggestions here.

AI Behaviour:
3843: AI Engineers should go into FRD (Seems like it should be trivial to add)
7494: Freed AI Melee Units that are waiting at a wormhole don't always attack
5001: AI Undervalues Turret Firepower (Adjusting how much the AI "downgrades" its consideration of the firepower of turrets is easy. Finding a good value to adjust it to without throwing off pacing of the game severely may be tricky)

Gameplay bugs:
3844: Ships in FRD not always regathering at FRD point (Thanks to its transient nature, may be difficult to pin down)
8819: Ships sometimes autotarget wormhole guard posts (Thanks to its transient nature, may be difficult to pin down)

UI:
9041: The New Assist Lines look weird (Reopened)
9129: Left <=> Right Mouse button switch hotkey does not work in the lobby

None of those look particularly easy to me ;)  The AI engineer thing is probably a lot trickier than it looks; getting them to use the FRD flag is one thing, getting them to act as if in FRD is another.

Adjusting the turret firepower-estimation thing is easy, but I don't know of a value that would be an improvement.

Never knew that the AI engineer management behavior and FRD (or FRD like behavior) didn't play well together. Yea, that would make it trickier.

How about something that is still probably underestimating, but to a lesser degree?
Like from 10 in the denominator to something like 5 in the denominator. (Or 6 or 7 or something) Yes, that will double it consideration (if 5 is used), but that is still a large underestimation, and thus shouldn't hurt game pacing too much.
As mentioned in the linked forum thread, some "fancier" methods for the AI to consider turrets may be needed, but that kind of thing would fall out of the realm of "quick fix". ;)

But since we're on the subject of things that players think are simple but are probably complex to add, I'll throw this one out. I always forget to set alerts for AI ships on my worlds, since it has to be done world by world, and if I could just set a global control to alert me every time there are some number > X on any of my planets I would love it. And yeah, I know about the attack number up at the top of the screen, but that totally fails to get my attention like a new alert popping up in the corner will. I've probably lost more planets through lack of knowledge of the attack than through crafty AI tactics.

Most of the times I've seen this, is because of maws / tractor beam in case it helps.
